WThis is a home-style version of a cocktail from a new cocktail list. This is a batch prepared mix which is bursting with essence of the festive period, making it excellent for hosting a celebration. Any leftover syrup you can use for brunch beverages, sweets, or for another batch of this cocktail.

Serves 10 people
To make the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Cocktail (produces 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Syrup: Put the listed components in a pot, bring to a simmer, mixing until the sugar dissolves. Then, take off the burner and leave to reach room temperature entirely. Pour to a sterilised bottle, seal and store chilled, where it will keep for around one month.
Preparing the Batch Mix: Combine all the spirits and syrup into one big jug, leave to sit for an hour, then filter it , ideally through a fine cloth, to ensure it's fully clarified.
When ready to serve: Measure 85ml of your batch mix into your cocktail shaker packed with ice, and agitate carefully for about 60 seconds until cold. Filter into an cold coupe glass or similar, decorate with some cranberries and complete it with a quick spritz of mandarin oil over the drink.
